
This egg tortilla omelet wrap in a flour tortilla, is a recipe that my husband and I have made so many times that it has become a staple in our family. In fact, we usually make just one and split it because it yields so much with a large tortilla. However, you can easily customize this recipe by adjusting the ingredients and the amount of eggs to your liking, as well as the size of the tortilla. Moreover, it comes together so quickly that you can whip it up in as little as 15 minutes before heading out to work. I assure you that no matter what you choose to put into this egg tortilla wrap, it will easily become your favorite! If you’re looking for a healthier option, you can add fresh vegetables like spinach, mushrooms, or peppers. The flavor variations are endless! So go ahead, enjoy this delicious and versatile egg tortilla wrap recipe!
Pro Tip: for a vegan option, use a vegan tortilla and a egg substitute like “just Egg” then fill with vegetables or plant based meat. I love this plant based breakfast sausage that Ela Vegan makes.
INGREDIENTS
These ingredients are based off of my favorite version of this egg tortilla omelet wrap. With that in mind, you can interchange the ingredients as you see fit. As I said above, I make one large wrap and split it with my husband but you could easily get a smaller tortilla and less eggs and make it a single serving. Other options; make it vegan, or vegetarian, or change the sausage for bacon or ham. The possibilities are endless!
- 1 Large or extra large tortilla
- 3 eggs
- 1/2 cup ground sausage
- 1/2 cup of Colby Cheese
- 2 TBSP of butter
- 1/4 TSP salt and pepper
- 1/4 TSP onion powder
- 1/4 TSP garlic powder
- Optional – 1 TBSP of fresh Turmeric
- *******BELOW IS OPTIONAL FOR GARNISH*******
- 1/4 cup of diced tomato
- 1 TBSP of diced habaneros
- 1 diced green onion
- 1 diced red onion
- 2 TBSP of Mexican Crema

STEP-BY-STEP INSTRUCTIONS



Turn your burner onto a low medium setting, for me that’s about a 3. Put the butter into the pan until it melts. While the butter is melting, take the eggs and put them into a bowl and scramble them. Add the salt, pepper, onion powder, and garlic powder to the scramble (add Optional Turmeric here). Once the butter is melted and spread throughout the pan (just move the pan around until the butter coats the pan) put the scrambled eggs with the seasoning into the pan. Again, you will want to spread the eggs throughout the entire pan so it’s even.
PRO TIP: The Turmeric is a great addition, and has many health benefits including reducing inflammation (check out this site for more info). The best part is that you are totally hiding it in this recipe so you get the benefits and not the taste!
Now that the scramble is in the pan and spread throughout it, you will want to add the tortilla to the pan. Just put the tortilla directly on top of the eggs and lay your spatula on top and gently press down. Doing this will help the tortilla stick to the eggs, which is what we want. Leave the tortilla and egg cooking for about 2 minutes or until you can move the egg and tortilla around in the pan with them sticky together and no egg scramble spilling over the tortilla. Once it’s ready, flip the tortilla and egg that are stuck together over with your spatula. The egg will then be on top and the tortilla on the bottom.







So, now that the egg is on top and the tortilla on the bottom, add your other ingredients here. I added cheese first and then the breakfast sausage. You want to try and keep it towards the middle of the tortilla. Once you have added your ingredients take one side of the tortilla and fold it towards the middle. Do the same with the other side. It should look like a omelet. Then turn down the burner to low (about a 1) and put a lid on it to help melt the cheese. Leave for about 2-3 minutes. You can serve it at this point OR you can flip the whole thing over one more time to crisp the top of the tortilla up (what I like to do).
Take it out of the pan and put it on your plate and add your diced tomatoes, green and red onion, habaneros, and Mexican Creama (it’s like a sweeter sour cream and less thick and so delicious).
